Every once in a while I just crave Spring Rolls. But not just any Spring Rolls!
The premade ones in the supermarket just doesn’t taste anything?
SO! I came up with these Homemade ones that are Full of Flavor
and they are also perfect for making in the Airfryer!
Excellent Friday Food !!!
Ingredients:
2 Chicken Breasts Skin and Boneless (Kycklingfileer)
1 Quart (1,2 Liter) Water (Vatten)
¼ Cup (1/2 dl) Salt
¼ Cup (1/2 dl) Sugar
2 Cups (1/2 Liter) Pointed Cabbage (Spetskål) Chopped
1 Onion (Gul Lök) Finely Chopped
3 Cloves Garlic (Vitlöksklyftor) Finely Chopped
2 Tbsp (Msk) Light Soy Sauce (Soya)
1 tsp (tsk) Kosher Salt (Flingsalt)
1 tsp (tsk) Sesame Oil
200g Cream Cheese (Philadephia Ost)
4 Tbsp (Msk) SriRacha Sauce
15-20 Spring Roll Wrappers (Depending on how big you make them)
2 Tbsp (Msk) White Corn Flour (Maizena Mjöl)
3 Tbsp (Msk) Water (Vatten)
Canola Oil (Raps Olja)
Mix the Water, Salt and Sugar into a brine.
Place the Chicken Breasts in the brine and put them in the fridge for 24 hours.
After 24 hours take out the Chicken Breasts and fry them in a pan on medium heat under lid until done.
Just make sure they are fully cooked through. No pink spots!
Shred the Chicken Breasts and chop into smaller pieces. Also chop the Pointed Cabbage, Onion and Garlic.
In a pan fry the Onion and Garlic so they get a little color.
In a bowl mix Chicken, Cabbage, Onion, Garlic, Soy Sauce, Salt, Sesame Oil, Cream Cheese
and SriRacha Sauce to make the Spring Roll filling.
Mix the Corn Flour & Water to make “Spring Roll Glue”.
Fill the Spring Roll Wrappers. Roll/Fold them up and seal them with the Glue.
Brush them lightly with the Canola Oil. Also brush the Airfryer Basket with Oil.
Start up your Airfryer at 400F (200c) for 3 minutes to warm up.
Fry the Spring Rolls for 6 - 8 minutes or until they have good color.
(Remember everything in the filling is already cooked)
